Here's the perfect recipe for an ice cream without eggs,unusual with interesting flavours you could try making this at home for a hot soaring summer afternoon dessert.This recipe was taken and modified from the Food section of an Indian Newspaper.I have modified to my family's taste.It tasted great.

Ingredientes

  • 4 cups coconut milk
  • 1 cup sugar
  • 4 red chillies chopped
  • 6-20 lime leaves
  • 2 lemon grass
  • 1 cup heavy cream
  • 4 cups vanilla custard

Direcciones

  1. Heat coconut milk until it comes to a simmer.
  2. Place it aside and whisk in the sugar until it dissolves.
  3. Add the lime leaves, lemon grass and chillies and keep aside for 10 minutes.
  4. Remove the lime leaves and lemongrass and whisk in the heavy cream and vanilla custard.Then chill over an ice bath.
  5. Meanwhile, freeze a shallow stainless steel container.
  6. Pour the cold mixture into the frozen pan.
  7. Chill for 20 minutes and check the ice cream. As the edges start to freeze, stir the mixture vigorously with a fork,or a spatula or a whisk to make it smooth and creamy. Continue to freeze after whisking.
  8. Stir the ice cream vigorously every half an hour, about four to five times, until it's firmly frozen.
  9. If the ice cream becomes too hard to stir, let it sit out till it's soft enough to stir before freezing it again.
  10. In three hours, your ice cream should be ready to serve.
