Receta Lime Cherry Berry Scones
On my recent trip to the "City" I stopped at my "go to" Supermarket and picked up a favorite of mine. Cherryland's Best, Dried Cherry Berry Mix. It is a blend of Cherries, Cranberries and Blueberries. I use this blend in just about everything!! Cherryland's Best, is a family owned Wisconsin company, and it began making Door County Cherry Juice products in 1944. Door County is known for being an excellent place for growing Montmorency (tart) Cherries. Each spring Big J and I take a drive to Door County to see the Cherry trees in bloom. It is a beautiful sight and on a warm day, the sweet scent of Cherry blossoms fill the air... Is it to early to have spring fever??
Lime Cherry Berry Scones
Ingredients
- 2 1/2 cups
- flour
- 1 cup
- oatmeal, old fashioned
- 1/2 cup
- sugar
- 1/4 t
- salt
- 1/2 t
- baking soda
- 1 t
- baking powder
- 1 stick
- butter, cold and cubed
- 2/3 c French vanilla creamer or milk
- 1 egg
- slightly beaten
- 3 pkgs True lime or 1 t lime zest
- 1/2 cup
- dried cranberries or cherry berry mix
- 1 cup
- confectioners sugar
- 2 T
- french vanilla creamer
- 1 T lime juice
- Cooking Directions
- Heat oven to 400 degrees. Line baking sheet with parchment paper
In large bowl stir together flour, oatmeal, sugar, salt, baking soda, and baking powder.
Cut in cubed butter with a pastry blender.
In small bowl, stir together creamer or milk, egg and True lime or lime zest. Add to flour mixture. Stir. Add dried cranberries or cherry berry mix and stir just until combined.
Turn out onto a floured surface, knead 8-10 times. Pat dough into a circle, cut into 8-10 wedges.
Place on parchment lined baking sheet and bake for 12-15 mins.
Remove from pan and transfer to wire rack to cool.
Drizzle with Vanilla Lime Glaze
Mix together; 1 cup confectioners sugar, creamer and lime juice until desired consistency. Drizzle over Scones.
