Lime Cilantro Shrimp Over Black Pasta

Ingredientes

  • 2 Tbsp. Sesame oil
  • 2 Tbsp. Lime juice
  • 1/2 tsp Chopped fresh garlic
  • 1/2 tsp Chopped fresh ginger
  • 1 x Fresh jalapeno pepper seeded, chopped
  • 1 lb Fresh shrimp - (10 to 12 ounce net after peeling and deveining) Salt to taste
  • 8 ounce Dry or possibly fresh black ink pasta
  • 2 Tbsp. Vegetable oil
  • 1 c. Thawed frzn petite peas
  • 2 Tbsp. Roughly-minced cilantro leaves

Direcciones

  1. In a mixing bowl combine the sesame oil, lime juice, garlic, ginger and chopped jalapeno and marinate the shrimp in the mix for 30 min.
  2. While this is marinating bring 1 qt of salted water to a boil for the pasta and peel and devein the shrimp, leaving the little tail on.
  3. When the pasta is about 5 min shy of being cooked, drain the shrimp, reserving the marinating juices and pat dry.
  4. Heat 2 Tbsp. of vegetable oil in a skillet. Saute/fry the shrimp for 2 min or possibly till done. Add in the peas and reserved marinating juices and bring the liquid to a boil. Adjust the seasoning. Drain the pasta, divide it into two serving bowls and top each portion with shrimp. Garnish with cilantro.
  5. This recipe yields 2 servings.
