There is something about spring that just makes me want to bake with lemons and limes. They are just so fresh and spring-y, aren't they? I have professed my love of cookie baking before, and it was only a matter of time before I experimented with adding lime to one of my favorite cookie recipes.

These cookies turned out even more yummy than I imagined! They are soft and chewy, and the white chocolate goes just perfect with the tart lime. I added toasted coconut, and I thought it added a great flavor and texture. Make sure you toast it for maximum yumminess. If you can't stand the thought of coconut, you can of course leave it out.

Cream butter and sugars just till smooth. Add egg, yolk, vanilla, lime juice, and lime zest. Beat till well blended. Combine flour, soda, baking powder, and salt. Stir into wet ingredients with the chips and coconut. Chill dough overnight to blend flavors. Roll in balls (or drop by spoonfuls) and place on lightly greased cookie sheets. Bake at 375° for 9-11 minutes.
