Linguine with Arugula

This recipe is so simple and would be a great base to start experimenting. You could add shrimp or chicken. Substitute kale or chard for the arugula. Or leave it as is and it's delicious as a side dish or light summer main.

Ingredientes

  • 1 pound linguine
  • 1/2 stick of butter
  • 1 1/2 c grated Romano or Parmesan cheese
  • black pepper
  • Several large handfuls of arugula

Direcciones

  1. Bring a large pot of salted water to a boil.
  2. Cook the linguine to desired doneness and drain, reserving some of the liquid.
  3. Transfer the pasta to a bowl and toss in the butter and cheese.
  4. Wilt in the arugula and toss with pepper.
  5. If the pasta is sticky or too thick, thin with pasta water until the consistency is as desired.
