Linguini With Crab ( Linguine Al Granchio )

Ingredientes

  • 2 lrg live male crabs about 23kg total weight
  • 3 x fresh red chilles seeded and finely minced
  • 3 x handfuls flat leaf parsley finely minced
  • 1 x juice of 4 lemons
  • 3 clv garlic peeled and grnd to a paste with a little salt
  • 250 ml extra virgin olive oil
  • 500 gm linguine sea salt and freshly grnd black pepper extra virgin extra virgin olive oil

Direcciones

  1. Get the fishmonger to kill the crabs for you.
  2. In a saucepan large sufficient to hold both bring sufficient water to the boil to cover the crabs.
  3. Boil gently for 20 min then remove from the water and leave to cold.
  4. Remove the claws and legs.
  5. Break the bodies open carefully.
  6. Remove the brown meat from inside the shell and transfer along with any juices to a bowl. Remove the white meat from the claws and legs and add in to the brown meat in the bowl.
  7. Mix together.
  8. Add in the chilli and most of the minced parsley the lemon juice and crushed garlic to the crab mix.
  9. Stir in the extra virgin olive oil.
  10. This sauce should be quite liquid.
  11. Cook the linguine in a generous amount of boiling salted water then drain thoroughly.
  12. Stir into the crab sauce but don't reheat.
  13. Serve sprinkled with the remaining minced parsley and a generous amount of extra virgin extra virgin olive oil.
  14. Serves 10
