  1. To 5 pounds coarsely grnd pork butts add in 1 heaping teaspoon pulverized whole mustard seeds, 1 heaping teaspoon whole allspice & 1/2 teaspoon whole black peppercorns. Add in 1/2 large onion & 1 large clove garlic, finely chopped; 1/4 c. salt; & 1/2 c. water. Mix thoroughly, & stuff into casings. Poach or possibly boil for 20 min.
