.%3C/p%3E%3Cp%3EMaking%20these%20cookies%20was%20really%20an%20uneventful%20affair,%20the%20steps%20are%20so%20straight%20forward%20that%20anyone%20can%20make%20them%20without%20batting%20an%20eyelid.%20The%20only%20highlight%20was,%20when%20I%20poured%20the%20crushed%20corn%20flakes%20into%20the%20mixing%20bowl,%20I%20was%20hit%20right%20in%20the%20face%20with%20this%20very%20very%20nice%20aroma.%20I%20am%20never%20a%20fan%20of%20cereals...I%20didn't%20grow%20up%20having%20a%20bowl%20of%20cereals%20with%20milk%20for%20breakfast.%20Believe%20it%20or%20not,%20I%20only%20got%20to%20taste%20my%20first%20bowl%20of%20cornflakes%20with%20milk%20in%20a%20business%20hotel%20when%20I%20first%20started%20travelling%20for%20work.%20This%20is%20the%20first%20time%20I%20baked%20something%20using%20corn%20flakes.%20I%20was%20pleasantly%20surprised%20that%20crushed%20cornflakes%20gives%20off%20such%20a%20nice%20fragrant...pardon%20my%20lousy%20expressions%20I%20can't%20describe%20it%20in%20words...but%20I%20thought%20there%20was%20even%20a%20hint%20of%20'milky'%20aroma%20in%20the%20air.%20I%20couldn't%20help%20but%20to%20check%20the%20cereal%20box%20once%20I%20got%20everything%20done.%20I%20have%20never%20known%20that%20cornflakes%20are%20made%20with%20cornmeals!%20What%20can%20I%20say?%20But%20never%20a%20day%20has%20gone%20by%20without%20me%20learning%20something%20new!%3C/p%3E%3Cp%3EOf%20course%20I%20doubt%20you%20will%20be%20able%20to%20earn%20big%20money%20if%20you%20were%20to%20sell%20them...what%20matters%20most%20is,%20a%20little%20effort%20could%20yield%20such%20great%20result.%20These%20little%20morsels%20have%20got%20a%20delicious%20buttery%20flavour...the%20cornflakes%20gives%20a%20nice%20crunch,%20and%20the%20cranberries%20provides%20a%20very%20nice%20sweet,%20tangy%20taste.%20Trust%20me,%20you%20won't%20be%20able%20to%20stop%20at%20just%20one.%20The%20only%20downside%20of%20this%20recipe%20is%20that%20it%20requires%20two%20egg%20yolks...but%20I%20have%20no%20problem%20with%20extra%20whites%20since%20I%20can%20save%20them%20for%20chiffon%20cakes.%20This%20is%20certainly%20going%20into%20my%20Chinese%20New%20Year%20cookies%20list,%20and%20I%20would%20make%20them%20anytime%20of%20the%20year%20:)%3C/p%3E%3Cp%3ECranberry%20Cornflakes%20Cookies%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E(makes%2077~80%20pcs)%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPlace%20corn%20flakes%20in%20a%20plastic%20bag.%20Crush%20them%20with%20your%20fingers%20into%20smaller%20pieces,%20do%20not%20crush%20too%20finely.%20Set%20aside.%3C/p%3E%3Cp%3ECut%20dried%20cranberries%20into%20smaller%20pieces%20(I%20used%20a%20kitchen%20scissor).%20Set%20aside.%3C/p%3E%3Cp%3EPlace%20unsalted%20butter,%20salt%20in%20a%20mixing%20bowl.%20Sift%20over%20the%20icing%20sugar%20(do%20not%20skip%20this%20step,%20this%20is%20to%20remove%20any%20lumps%20in%20the%20icing%20sugar).%20With%20a%20manual%20whisk%20or%20a%20wooden%20spoon%20(or%20an%20electric%20whisk),%20beat%20the%20butter,%20salt%20and%20icing%20sugar%20till%20the%20mixture%20turns%20pale.%3C/p%3E%3Cp%3EWhisk%20as%20you%20dribble%20in%20the%20egg%20yolks,%20whisk%20till%20combine.%3C/p%3E%3Cp%3ESift%20over%20plain%20flour%20and%20corn%20flour.%20With%20a%20spatula,%20fold%20the%20mixture%20until%20the%20flour%20is%20incorporated.%3C/p%3E%3Cp%3EAdd%20in%20cornflakes%20and%20dried%20cranberries.%20Mix%20with%20spatula%20(or%20use%20hand)%20till%20just%20combined.%3C/p%3E%3Cp%3EArrange%20mini%20paper%20liners,%20evenly%20spaced,%20on%20a%20baking%20tray.%3C/p%3E%3Cp%3EMeasure%207g%20doughs%20and%20place%20each%20into%20a%20mini%20paper%20liner.%20(Note:%20it%20is%20not%20necessary%20to%20shape%20the%20dough%20into%20a%20smooth%20round%20ball,%20just%20roughly%20gather%20it%20into%20a%20lump.%20These%20cookies%20can%20be%20baked%20without%20using%20paper%20liners,%20arrange%20them%20evenly%20spaced%20on%20a%20baking%20tray%20lined%20with%20parchment%20paper.%20They%20don't%20expand%20much%20upon%20baking.)%3C/p%3E%3Cp%3EBake%20in%20preheated%20oven%20at%20140degC%20for%20about%2025%20minutes%20until%20lightly%20golden.%20(Note:%20all%20ovens%20behave%20differently,%20do%20keep%20a%20close%20watch%20near%2020mins%20of%20baking%20time%20to%20prevent%20the%20cookies%20from%20over%20browning.%20Turn%20the%20tray%20around%20half%20way,%20when%20necessary.)%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20transfer%20to%20a%20cooling%20rack,%20leave%20to%20cool%20completely%20before%20storing%20in%20air%20tight%20containers.%20(Note:%20when%20the%20cookies%20are%20still%20warm,%20the%20cornflakes%20may%20taste%20a%20little%20chewy/soft,%20but%20it%20will%20turn%20crispy%20upon%20cooling.)%3C/p%3E%3Cp%3ERecipe%20Source:%20Little%20Cookies%20Earn%20Big%20$%3C/p%3E){kind=link}
