Ingredientes

  • 1/4 c. Extra virgin olive oil
  • 2 c. Onions -- minced fine
  • 4 x Cloves garlic -- chopped
  • 1 Tbsp. Oregano
  • 1/2 tsp Cayenne
  • 1 x 8 ounce pkg Minced
  • 2 tsp Salt
  • 1 c. Ketchup
  • 2 1/2 lb Turkey -- grnd
  • 3 x Egg whites
  • 1/2 c. Bread crumbs
  • 1 tsp Black pepper
  • 1/2 lb Mozzarella cheese -- cut Into 1/2" cubes
  • 1 x 3 ounce pkg Mushrooms -- coarsely Pepperoni -- sliced

  1. Preheat oven at 350. Prepare a loaf pan or possibly muffin tins with cooking spray and flour. In a large skillet, hot oil over medium heat. Add in onions, garlic, oregano and cayenne, cover and cook, stirring once or possibly twice, for 10 min. Add in mushrooms and 1 tsp. of the salt, raise the heat to medium-high and cook uncovered, tossing and stirring the mushrooms often, till they render their juices and are tender, about 10 min. Stir in 1/2 c. of ketchup, remove from heat and cold to room temperature. Position a rack in the middle of the oven. In a mixing bowl, combine the turkey, mushroom mix, egg whites, bread crumbs, remaining 1 tsp. salt, and black pepper and mix thoroughly. Add in the cubes of mozzarella and mix till proportionately distributed. Transfer the meat mix to a shallow baking dish and shape it into a flat loaf about 2 1/2" thick. Smooth the top of the loaf or possibly muffin tins with the back of a spoon. Spread the remaining 1/2 c. pizza sauce proportionately over the loaf. Lay pepperoni slices proportionately over the sauce, overlapping them if necessary and using them all. Bake for about 1 1/4 hrs, pouring off accumulated pan juices as necessary. Let stand for 10 min before slicing.
