Receta Lobster and Corn Bruschetta
Ingredients:
- Lobster – 1, small (about 300 to 350 gms), cooked, cleaned, chopped
- Sweet Corn Kernels – 3/4 to 1 cup
- Extra-Virgin Olive Oil – 1 tblsp plus extra
- Red Capsicum – 1, small, seeds removed, chopped
- Spring Onions – 1 tblsp, finely chopped
- Small Onion – 1, minced
- Avocado – 1/4, pitted, finely sliced
- Garam Masala Powder – 2 tsp
- Thick Cream – 2 1/2 tblsp
- Coriander Leaves – handful, chopped
- French Baguette – 1, small, sliced, toasted
- Salt as per taste
- Black Pepper Powder as per taste
Method:
1. Heat oil in a pan over medium flame.
2. Saute the onions, corn and capsicum for 2 to 3 minutes.
3. Mix the garam masala powder and cream in a bowl.
4. Add to the pan and cook for a minute.
5. Add lobster, coriander leaves and spring onions.
6. Stir well.
7. Add salt and pepper powder.
8. Reduce flame and simmer for 6 to 8 minutes.
9. Spoon over the lobster and corn mixture on the baguette slices.
