Lobster Cocktail With Ginger Vinaigrette

Ingredientes

  • 12 ounce fresh cooked lobster, meat, (about 2 lobsters)
  • 1/2 c. diced avocado
  • 1/2 c. diced mango
  • 1/4 x sweet red pepper
  • 1 c. baby greens or possibly 1 c. mesclun
  • 2 Tbsp. julienned daikon Dressing
  • 2 Tbsp. lime, juice
  • 1 Tbsp. soy sauce
  • 1 Tbsp. minced fresh basil
  • 1 sm green onion, chopped
  • 1 tsp liquid honey
  • 1/2 tsp Asian chili paste or possibly 1/2 tsp warm pepper sauce
  • 1/2 tsp grated ginger, root
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 c. vegetable oil

Direcciones

  1. Break lobster meat into chunks, saving any claws for garnish.
  2. In bowl, combine lobster, avocado and mango; pour in half of the dressing and toss.
  3. Cover and chill for30 min. (Make-ahead: Chill lobster mix and remaining dressing for up to 2 hrs.)
  4. Cut red pepper in half crosswise; slice into thin matchstick-size strips.
  5. Arrange greens in bottom of each of 8 cocktail glasses.
  6. Top each with 1/4 c. (50 mL) lobster mix.
  7. Garnish with red pepper and daikon; drizzle with remaining dressing.
  8. Dressing:Whisk together juice, soy sauce, basil, onion, honey, chili paste, ginger, salt and pepper.
  9. Gradually whisk in oil.
