Receta Lobster Newburg Crepes

- Make classic crepes and set aside. Heat butter in top of double boiler over simmering water. Stir in flour and cook 2 to 3 min. Gradually add in cream and lowfat milk. Cook, stirring till sauce thickens. Mix a little of the warm cream mix into egg yolks. Carefully stir egg yolk mix into sauce. Blend in sherry, salt and pepper. Add in lobster and heat through.
- Fill crepes, reserving some of the sauce to top the crepes. Roll and place in buttered oven-proof serving dishes. Top with sauce. Place in 350 degree oven 10 to 15 min or possibly till heated through. Makes 6 servings.
