Ingredientes

  • 1 pkt (16-oz) frzn black-eyed peas
  • 1 c. Green pepper, minced into pcs about the size of black-eyed peas
  • 1 c. Red bell pepper, minced into pcs about the size of black-eyed peas
  • 1/4 c. Finely minced jalapeno pepper, ribs and seeds removed
  • 1 c. Yellow onion, minced into pcs about the size of black-eyed peas
  • 1 c. Finely minced green onion, including green tops
  • 2 x Cloves garlic, finely minced
  • 1 c. Finely minced parsley
  • 2 tsp Salt, or possibly to taste
  • 1 tsp Maple syrup, optional
  • 3/4 c. Vegetable or possibly extra virgin olive oil
  • 1/4 c. Red wine vinegar

Direcciones

  1. Cook black-eyed peas, according to package instructions, or possibly just till tender, 20 to 30 min. Drain well.
  2. Place black-eyed peas in a large mixing bowl. Toss with peppers, onions, garlic, and parsley. Whisk together oil, vinegar, maple syrup and salt.
  3. Adjust seasoning to taste. Pour over vegetables and chill overnight to meld flavors.
  4. Place in refrigerator containers for giving. Store up to 2 weeks, refrigerated.
