%3C/p%3E%3Cp%3ERemember%20I%20bought%20Nacho%20Mom's%20Vegan%20Queso???%20It's%20so%20amazing....one%20of%20my%20new%20addictions.%20Unfortunately,%20I%20only%20bought%202%20jars.%20One%20jar%20is%20gone....I'm%20waiting%20to%20open%20the%20other%20because%20I%20know%20when%20I%20open%20it,%20it%20will%20be%20gone...sniff....and%20then%20there%20will%20be%20none.%3C/p%3E%3Cp%3EAnd%20I've%20been%20eating%20my%20awesome%20Dr.%20Cow%20Cashew%20Cheese%20(Kale%20flavor).....so%20good,%20you%20gotta%20try%20it:%3C/p%3E%3Cp%3EOther%20stuff%20I've%20been%20eating-%3C/p%3E%3Cp%3EPeel%20the%20sweet%20potatoes%20and%20cube%20them.%20%20Put%20them%20in%20a%20pot%20and%20cover%20with%20water.%20Bring%20to%20boil.%20Boil%20lightly%20until%20soft%20(~30%20min).%20%20Drain.%20%20Put%20the%20rice%20and%20beans%20into%20the%20pot%20you%20cooked%20the%20sweet%20potatoes%20in.%20%20Add%201/2%20cup%20water.%20Cook%20on%20medium%20heat%20until%20heated%20through,%20adding%20water%20as%20needed.%20%20Add%20in%20all%20spices.%20Stir%20well.%20Add%20in%20the%20kale%20and%20let%20it%20wilt%20for%20a%20few%20minutes.%20Then,%20add%20in%20the%20cooked%20sweet%20potatoes.%20Stir%20very%20well.%20At%20this%20point,%20the%20sweet%20potatoes%20will%20mash%20up%20very%20easily%20in%20the%20pot.%20That's%20ok.%20I%20like%20it%20mashed%20up%20well.%20Add%20in%20the%20lime%20juice%20last.%20Again,%20stir.%20Serve%20with%20more%20lime%20juice%20on%20top!%3C/p%3E%3Cp%3EPhew.....that%20took%20forever.%20Hahaha....but%20at%20least%20it's%20done.%20%20I'll%20be%20out%20and%20about%20this%20weekend%20eating%20some%20great%20food....can't%20wait%20to%20post%20about%20it!!%3C/p%3E%3Cp%3EPS-Have%20any%20of%20you%20been%20to%20Ireland?%20%20(thinking%20about%20a%20possible%20future%20trip)%20We've%20never%20done%20any%20actual%20escorted%20tours%20on%20buses....but%20I'm%20tempted%20to%20do%20one%20or%20two%20there,%20since%20a%20lot%20of%20the%20great%20scenery/coastline%20is%20not%20accessible%20by%20train.%20%20Thoughts??%20Have%20any%20of%20you%20done%20coach%20tours%20before?%3C/p%3E%3Cp%3EEat%20smart,%3C/p%3E%3Cp%3ET.%3C/p%3E){kind=link}
