"Lou Emma's" Spinach Casserole

Ingredientes

  • 3 x 10 oz frzn minced spinach
  • 1 sm mushroom pcs canned
  • 1/2 c. butter
  • 2 Tbsp. flour
  • 1 c. lowfat milk salt pepper
  • 1 can artichoke hearts
  • 1/2 c. lowfat sour cream
  • 1/2 c. mayonnaise
  • 1 tsp lemon juice

Direcciones

  1. Cook minced spinach till done, drain well. Saute/fry mushrooms in margarine then remove mushrooms from skillet and add in flour. Gradually stir in lowfat milk till smooth. Add in spinach, mushrooms and seasonings to taste.
  2. Cut artichoke hearts in half and cover bottom of the casserole. Pour spinach mix over the artichokes. Heat lowfat sour cream, mayonnaise and lemon juice together. Spread over top of casserole. Heat in 350 oven till bubbly.
  3. Serves 8 - 10.
