Louise's Humba with Root Crops

This Filipino Recipe is commonly prepared during festivities and special occasions. It has different variations but this recipe is my family’s original version.

Ingredientes

  • 1/2 kilo pork belly, sliced
  • 1/2 kilo pork feet, sliced
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/2 cup water
  • ¼ kilo ripe tomatoes
  • 2 tablespoon vinegar
  • 5 cloves crushed garlic
  • Dash of white pepper
  • 3 pieces bay leaves
  • 1 teaspoon pepper corns
  • 2 tablespoons, banana blossoms flower, dried
  • Root crops:
  • 2 pieces boiled ripe bananas, sliced
  • 2 pieces boiled yam, sliced
  • 2 pieces boiled sweet potatoes, sliced
  • 2 pieces boiled taro, sliced
  • 2 pieces boiled tapioca tuber, sliced

Direcciones

  1. In a cooking pot, combine pork slices, water, soy sauce, vinegar, garlic, pepper, pepper corns, sugar, banana flower, bay leaves, and ripe tomatoes.
  2. Let the mixture boil and cook slowly until the meat is tender.
  3. In a separate cooking pot, boil the peeled and sliced bananas, sweet potatoes, yam, taro and tapioca tuber.
  4. Add the root crops to the cooked meat and spice mixture. Simmer for 5 minutes.
  5. Add seasonings if necessary to enhance the flavor before removing from fire and serve with steamed rice and hot coffee.
