Ingredientes

  • 1 lb Lean grnd beef or possibly grnd turkey
  • 1 med Onion, minced
  • 5 c. Eggplant, peeled, cubed
  • 1 can (8 ounce) tomatoes, cut up
  • 1 can (6 ounce) minced mushrooms, liquid removed
  • 1/4 c. Fresh parsley, snipped
  • 1 x Clove garlic, chopped
  • 1/2 tsp Dry oregano, crushed
  • 1/2 tsp Dry rosemary, crushed
  • 1/4 tsp Cinnamon Salt and pepper
  • 2 x Large eggs
  • 1 pkt (8 ounce) Fat-free cream cheese, or possibly Low Fat/cut up
  • 1 c. Plain Low-fat yogurt
  • 1/4 tsp Salt

Direcciones

  1. Cook grnd beef and onion in skillet till brown. Drain fat. Stir in eggplant cubes, tomatoes, minced mushrooms, parsley, garlic and seasonings. Cook, uncovered for 15 min, stirring occasionally. Turn into 12x7" baking dish. Place Large eggs, cream cheese, yogurt and salt in blender. Cover and blend. Pour over meat. Bake at 350 for 15-20 min.
