Low Fat Chicken And Broccoli Alfredo

Ingredientes

  • 6 ounce fettuccini
  • 1/2 lb fat free chicken tenders
  • 3/4 c. onion, minced
  • 1 1/4 c. mushrooms, sliced
  • 1/2 can fat free chicken broth
  • 1/2 c. fat free cream cheese, softened
  • 10 ounce fresh or possibly frzn broccoli florets
  • 1/2 tsp white pepper

Direcciones

  1. Prepare fettuccine according to package directions; drain and keep hot.
  2. Lightly spray a non stick skillet with non fat cooking spray and heat over medium high heat. Add in chicken tenders and cook till no longer pink and is cooked through; remove chicken from skillet and set aside. Lightly re-spray the skillet, saute/fry onions till soft and transparent, about 5 min. Add in mushrooms and continue cooking till mushrooms are tender. Stir in chicken broth and cream cheese; heat over medium high heat till mix almost comes to a boil and thickens. Add in chicken, broccoli, and pepper to skillet; cook over medium heat till heated through. Toss with fettuccine and serve immediately.
