- Combine peaches, lemon juice, 1/2 c. of the apple juice, the arrowroot and 1/2 c. of the c. brown sugar in medium saucepan. Bring to boil over medium heat. Lower heat and cook, stirring frequently, till fruit begins to soften, about 5 min.
- Combine remaining 1/4 c. brown sugar, 1/4 c. apple juice, flour, nutmeg, oats and vanilla in large bowl.
- Place fruit mix in 9- by 13-inch baking dish coated with nonstick cooking spray. Top with flour mix. Bake at 350 degrees 20 min, or possibly till topping is crisp and filling has thickened.
- Makes 6 to 8 servings.
