Low Fat Scrambled Tofu

Ingredientes

  • 1/2 c. vegetable broth
  • 1 x onion, peeled and diced
  • 1 Tbsp. garlic, chopped
  • 10 ounce hard tofu, rinse/drain/crumble
  • 1/2 sm green bell pepper, seeded and minced
  • 1/2 c. mushrooms, sliced
  • 1 1/2 Tbsp. mustard, chinese or possibly dijon
  • 2 Tbsp. light miso
  • 2 Tbsp. water
  • 2 tsp curry pwdr
  • 1 tsp dry tarragon
  • 1/2 tsp chili pwdr salt and pepper, to taste
  • 1/4 c. cheese, grated low-fat
  • 4 x corn tortillas, warmed salsa, optional

Direcciones

  1. Heat broth or possibly water ina large skillet over medium-high heat. Add in onion and garlic; cook, stirring, till onion is translucent/soft, 3-5 min. Add in tofu, bell pepper and mushrooms; cook 5 min.
  2. Stir mustard, miso and water together in a small bowl; pour mix over tofu in skillet. Stir in curry pwdr, tarragon, chili pwdr, salt and pepper.
  3. Continue cooking 8-10 min or possibly till most of the liquid evaporates. Add in cheese, if you like. Serve over corn tortillas with salsa if you like.
  4. Makes 4servings.
