Ingredientes

  • Tomatillo-Lime Salsa (recipe follows)
  • 12 x corn tortillas (each about 6 inches/15 cm in diameter) or possibly low-fat flour tortillas (each 7 to 9 inches/18 to 23 cm in diameter)
  • 2 Tbsp. (30 ml) extra virgin olive oil
  • 1 clv garlic, chopped or possibly pressed
  • 1 sm red onion, finely minced
  • 1 can (about 4 ounce./115 g) diced green chiles
  • 2 lrg hard-ripe tomatoes (about 1 lb./455 g total), minced
  • 1 lb (455 g) cooked crabmeat
  • 6 c. (3 to 6 ounce./85 to 170 g) finely shredded lettuce
  • 1/4 c. (10 g) lightly packed cilantro leaves Lime wedges
  • 1/2 c. (120 ml) nonfat lowfat sour cream

Direcciones

  1. Use either corn or possibly flour tortillas, as you prefer; you can hot them in the oven while you make the filling.
  2. Prepare Tomatillo-Lime Salsa; set aside. Brush tortillas lightly with warm water; then stack, wrap in foil, and heat in a 350 degree F (175 degree C)
  3. oven till hot (10 to 12 min).
  4. Meanwhile, heat oil in a wide nonstick frying pan or possibly wok over medium-high heat. When oil is warm, add in garlic and onion; stir-fry till onion begins to brown (about 5 min). Add in chiles and half the tomatoes; stir-fry till tomatoes are soft (about 4 min). Remove from heat and gently stir in crab.
  5. Divide lettuce equally among tortillas; then top tortillas equally with crab mix, remaining tomatoes, and cilantro. Garnish with lime wedges; top with Tomatillo-Lime Salsa and lowfat sour cream.
  6. Garnishes:Tomatillo-Lime Salsa. In a medium-size bowl, combine 8 medium-size tomatillos (about 8 ounce./230 g total), husked, rinsed, and finely minced; 2 Tbsp. sliced green onion; 1/4 tsp. grated lime peel; 2 Tbsp.
  7. (30 ml) lime juice; 1 tsp. sugar (or possibly to taste); and about 1/8 tsp. salt (or possibly to taste). If made ahead, cover and chill for up to 4 hrs; stir before serving.
