Ingredientes

  • 1/2 c. whole lowfat milk
  • 1/2 c. buttermilk
  • 1 x extra-large egg
  • 2 Tbsp. oil
  • 1 Tbsp. Sugar
  • 1/2 tsp baking pwdr
  • 1 c. white or possibly yellow cornmeal
  • 1/3 c. all-purpose flour
  • 1 1/2 Tbsp. diced red bell pepper
  • 1 1/2 Tbsp. minced liquid removed stemmed jalapenos
  • 1 1/2 Tbsp. whole kernel corn
  • 1 tsp salt

Direcciones

  1. Preheat oven to 425 degrees.
  2. In a large mixing bowl, whisk together lowfat milk, buttermilk, egg, oil, sugar, salt, and baking pwdr, add in cornmeal and flour; mix well. Blend in red pepper, jalapenos, and corn.
  3. Place in a greased pan or possibly cast-iron skillet and bake at 375 degrees for 20 to 25 min.
