Lunchtime Quesadilla Recipe with Smoked Turkey, Apples, Havarti Cheese & Arugula
When I was a kid, I couldn’t stand munching away on a whole apple. Apple slices, lovingly cored and seeded by my mum, always tasted far better to me. It’s funny that my eldest son is the same, even though he now sees me happily munching away on whole crisp apples each autumn. Luckily, we all love apple recipes and tend to get a bit overzealous with making some of our favorites, such as The Family Crockpot Applesauce, Spaghetti Squash with Apples & Toasted Pecans and Apple Upside-Down Biscuits.

When we lived in New York City, and then New Jersey for a year, there was a little deli that my husband frequented in Denville, New Jersey. While neither of us remembers the name of the deli, their signature sandwich will always have a place in our memories. The Alpine Slide was a stack of smoked turkey breast, cheese, lettuce and (the best part of all) apple slices, sandwiched between two pieces of soft whole wheat bread.
This quesadilla is a riff on the Alpine Slide. It includes all of the main ingredients – smoked turkey, havarti cheese, the sliced apples of my childhood – but has the added bonus of melted cheese. Because you can really never go wrong with melted cheese, right?
The recipe:
Heat a medium-sized skillet over medium-high heat. Lay 1 whole wheat tortilla in the pan, and spread 2 teaspoons of the mustard over the tortilla.
Top with 1/4 of the cheese, turkey, apple and arugula.
Fold over the other side of the tortilla to form a half-circle. Press down with a spatula as the cheese melts to seal the quesadilla.
When the bottom is golden brown, flip the quesadilla and brown on the other side. Remove from the pan, cut into thirds and serve.
Repeat with the remaining tortillas, mustard, cheese, turkey, apple & arugula.

- 8 tsp stone ground mustard
- 6 oz. sliced havarti cheese
- 6 oz. sliced smoked turkey breast
- 1 1/2 Gala apples, cored and thinly sliced
- 1 cup arugula
