Receta Macanese Curry Prawns

- First, make the curry sauce. Heat the oil and add in the onion, garlic, chilli and chopped garlic and saute/fry gently till the onions are golden brown, about 10 min. Add in the curry pwdr and garam masala and continue to cook till fragrant, another 5 min. Add in the coconut lowfat milk and water and simmer gently then puree in a food processor till smooth. Season to taste with salt and pepper.
- Meanwhile, heat the oil and saute/fry the onions till golden brown. Add in the curry sauce and coriander and just bring to the boil. Add in the prawns and simmer for 5 min till the prawns are orange and cooked through.
- Serve on a bed of steamed rice with a little extra coriander.
