Macanese Curry Prawns

Ingredientes

  • 500 gm shelled king prawns, (tail on)
  • 2 med onions, minced
  • 3 Tbsp. peanut oil
  • 1/2 bn coriander extra coriander for serving
  • 3 Tbsp. peanut oil
  • 1 lrg onion, diced
  • 2 x cloves garlic, chopped
  • 2 sm red chillies, chopped
  • 2 tsp chopped ginger
  • 1 tsp curry pwdr
  • 1 tsp garam masala
  • 250 ml Thai coconut lowfat milk
  • 250 ml water salt and pepper to taste

Direcciones

  1. First, make the curry sauce. Heat the oil and add in the onion, garlic, chilli and chopped garlic and saute/fry gently till the onions are golden brown, about 10 min. Add in the curry pwdr and garam masala and continue to cook till fragrant, another 5 min. Add in the coconut lowfat milk and water and simmer gently then puree in a food processor till smooth. Season to taste with salt and pepper.
  2. Meanwhile, heat the oil and saute/fry the onions till golden brown. Add in the curry sauce and coriander and just bring to the boil. Add in the prawns and simmer for 5 min till the prawns are orange and cooked through.
  3. Serve on a bed of steamed rice with a little extra coriander.
