'.%3C/p%3E%3Cp%3EWe%20really%20enjoyed%20eating%20at%20this%20street%20cafe,%20it%20is%20frequented%20by%20locals%20and%20tourists%20alike%20and%20is%20a%20great%20place%20for%20people%20watching.%3C/p%3E%3Cp%3EThis%20was%20our%20meal,%20a%20bowl%20of%20creamy%20polenta%20and%20a%20plate%20with%20two%20huge%20fillets%20of%20mackerel%20with%20a%20pool%20a%20lovely%20Madeira%20sauce%20flavoured%20with%20thyme.%3C/p%3E%3Cp%3EI%20wanted%20to%20recreate%20this%20fish%20dish,%20all%20I%20had%20to%20go%20on%20was%20the%20name%20of%20the%20dish%20and%20what%20I%20had%20tasted.%20%20I%20reckoned%20that%20if%20it%20was%20a%20Madeirean%20Sauce%20it%20would%20contain%20Madeira,%20don't%20you%20think?%20%20We%20had%20really%20enjoyed%20drinking%20a%20glass%20of%20Madeira%20on%20our%20holiday%20and%20had%20also%20been%20to%20the%20tour%20of%20Blandy's%20to%20learn%20about%20how%20Madeira%20was%20made%20and%20the%20history%20of%20this%20group%20of%20producers.%20%20I%20was%20pleased%20to%20find%20a%20bottle%20of%20Blandy's%20Duke%20of%20Clarence%20Madeira%20in%20my%20local%20supermarket.%20%20I%20had%20also%20definitely%20seen%20and%20tasted%20thyme%20in%20the%20sauce%20and%20that's%20about%20all%20%20%20Here%20is%20what%20I%20came%20up%20with:%3C/p%3E%3Cp%3EMackerel%20in%20Madeirean%20Special%20Sauce%20with%20Cooked%20Maize%20(Mihle%20or%20Polenta)%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3E1.%20Bring%20the%20water%20to%20the%20boil%20in%20a%20large%20pan,%20add%20the%20salt.%3C/p%3E%3Cp%3E2.%20Pour%20the%20polenta%20in%20a%20stream%20into%20the%20boiling%20water%20whisking%20gently.%3C/p%3E%3Cp%3E3.%20Keep%20whisking%20until%20the%20polenta%20has%20thickened.%3C/p%3E%3Cp%3E4.%20Cover%20the%20polenta%20and%20either%20keep%20cooking%20on%20the%20stove%20at%20a%20low%20heat,%20or%20put%20in%20the%20oven%20at%20150C.%20%20Stir%20well%20every%2010%20minutes%20scraping%20down%20the%20sides.%20%20Cook%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3E5.%20Stir%20in%20the%20cheese%20and%20butter%20and%20serve%20immediately.%3C/p%3E%3Cp%3EFor%20the%20fish%3C/p%3E%3Cp%3E4%20fresh%20mackerel%20fillets%3C/p%3E%3Cp%3E1%20small%20onion,%20finely%20chopped%3C/p%3E%3Cp%3E1/2%20lemon%20zest%20and%20juice%3C/p%3E%3Cp%3E2%20heaped%20tsp%20%20butter%3C/p%3E%3Cp%3E1%20tbsp%20olive%20oil%3C/p%3E%3Cp%3E1%20tsp%20fresh%20thyme%20leaves%3C/p%3E%3Cp%3Esalt%20and%20freshly%20ground%20black%20pepper%3C/p%3E%3Cp%3E50%20ml%20Madeira%3C/p%3E%3Cp%3EPlace%20the%20mackerel%20on%20a%20flat%20plate%20or%20baking%20tray%20and%20cover%20with%20the%20grated%20lemon%20zest,%20lemon%20juice%20and%20a%20tsp%20thyme%20leaves%20stripped%20from%20the%20stalks,%20cover%20with%20cling%20film%20and%20leave%20for%20at%20least%2020%20minutes.%3C/p%3E%3Cp%3EPut%20the%20Madeira%20in%20a%20small%20pan%20on%20a%20medium%20high%20heat%20and%20simmer%20to%20reduce%20the%20liquid%20by%20half.%3C/p%3E%3Cp%3EHeat%20the%20olive%20oil%20in%20a%20pan%20on%20a%20medium%20heat%20and%20saut%C3%A9%20the%20onion%20until%20soft,%20add%20the%20butter%20then%20cook%20the%20mackerel%20fillets%20for%20about%203%20minutes%20each%20side.%3C/p%3E%3Cp%3EServe%20the%20mackerel%20fillets%20on%20top%20of%20the%20creamy%20polenta%20and%20season%20the%20pan%20juices%20to%20taste%20and%20pour%20over%20the%20dish,%20the%20pour%20over%20the%20reduced%20Madeira.%3C/p%3E%3Cp%3EI%20also%20chopped%20some%20courgettes%20and%20pan%20fried%20them%20in%20butter%20with%20garlic%20and%20cherry%20tomatoes%20to%20serve%20with%20the%20mackerel%20and%20polenta.%3C/p%3E%3Cp%3EI%20used%20this%20amazing%20Farina%20Polenta%20Taragna%20from%20UFUUD%20a%20specialist%20supplier%20of%20traditional%20Italian%20food.%20Molino%20Filippini%E2%80%99s%20special%20flour%20for%20taragna%20polenta%20is%20composed%20of%20a%20mixture%20of%20ground%20buckwheat%20and%20maize,%20carefully%20blended%20to%20ensure%20a%20top-class%20product%20that%20respects%20the%20traditions%20of%20northern%20Italy.%20%20I'll%20be%20sharing%20more%20delicious%20Italian%20foods%20from%20UFUUD%20very%20soon.%3C/p%3E%3Cp%3EPolenta%20Chips%3C/p%3E%3Cp%3EPolenta%20is%20incredibly%20filling%20so%20we%20found%20that%20we%20had%20quite%20a%20lot%20left%20over.%20%20I%20lined%20a%20tray%20with%20baking%20paper%20and%20spread%20the%20thick%20polena%20on%20top.%20%20I%20then%20left%20it%20in%20the%20fridge%20for%20a%20few%20days,%20although%20you%20can%20use%20it%20as%20soon%20as%20it%20is%20cold%20and%20set.,%20and%20sliced%20it%20into%20finger%20shapes.%3C/p%3E%3Cp%3ETo%20bake%20the%20'chips'%20I%20brushed%20oil%20onto%20a%20non-stick%20baking%20sheet%20and%20laid%20out%20the%20chips%20with%20a%20little%20gap%20between%20each%20one,%20I%20then%20brushed%20all%20the%20chips%20with%20oil%20and%20baked%20in%20the%20oven%20at%20180C%20for%2015%20minutes.%20%20I%20took%20the%20tray%20out%20and%20turned%20the%20chips%20over,%20then%20returned%20to%20the%20oven%20for%20another%2015%20minutes.%3C/p%3E%3Cp%3EThey%20were%20crisp%20on%20the%20outside%20and%20soft%20on%20the%20inside,%20the%20flavour%20of%20the%20cheese%20came%20through%20more%20strongly%20than%20in%20the%20wet%20polenta.%20%20The%20change%20in%20taste%20reminded%20me%20of%20the%20gnocchi%20%20I%20made,%20which%20was%20also%20much%20tastier%20when%20saut%C3%A9ed%20in%20butter!%3C/p%3E){kind=link}
