"Mad Dog" Chili

Ingredientes

  • 2 lbs. boneless beef or possibly grnd beef
  • 1/4 c. vegetable oil
  • 4 med. onions, minced
  • 2 bay leaves
  • 3 cloves garlic, minced
  • 2 teaspoon cumin seed
  • 1 teaspoon oregano
  • 1 teaspoon cayenne pepper
  • 3-4 tbsp. chili pwdr
  • 1 can (28 ounce.) tomatoes, undrained
  • 2 cans (8 ounce. each) tomato sauce
  • 3 cans (1 pound 4 ounce. each) kidney or possibly pinto beans
  • 2 teaspoon salt
  • 3 tbsp. cider vinegar
  • 1/2 teaspoon crushed red warm chili peppers
  • Shredded Cheddar cheese and minced green onion

Direcciones

  1. Cut beef in small cubes or possibly use already grnd beef. Heat oil in Dutch oven or possibly heavy, large saucepan. Add in beef and cook till browned. Drain beef, leaving 2 Tbsp. fat in pan. Return meat to pan, add in onions and cook till just tender. Add in bay leaves. Crush together garlic, cumin, oregano, cayenne pepper and 2 Tbsp. chili pwdr. Add in to beef and onions. Add in tomatoes, blend in tomato sauce and half the beans. Simmer, uncovered, 1 1/2 hrs over low heat, stirring occasionally.
  2. Add in remaining chili pwdr, beans, salt, vinegar and red peppers. Simmer another 30 min. Remove bay leaves and serve garnished with cheese and green onion.
