Receta Madeleines
Made famous by Marcel Proust, who referred to them in his novel, "Remembrance of Things Past".

- Preheat the oven to 375 F.
- Generously butter a 12-cup madeleine pan. If you do not have one, use a muffin pan.
- Sift together the flour and the baking powder.
- Using an electric mixer, beat together the eggs and the powdered sugar in a bowl for 5-7 minutes or until thick and creamy and the mixture leaves a ribbon trail when the beaters are lifted.
- Gently fold in the lemon or orange rind and the juice using a rubber spatula or metal spoon
- Beginning with the flour mixture, alternately fold in the flour and the melted butter in four batches using a rubber spatula
- Allow the mixture to stand for 10 minutes
- Carefully spoon into the pan
- Tap gently to release any air bubbles
- Bake for 12-15 minutes
- Rotate the pan halfway through the cooking time
- Bake until a skewer or cake tester inserted in the center comes out clean
- Tip the madeleines onto a wire rack to cool completely
- Dust with the confectioners' sugar before serving
