Made famous by Marcel Proust, who referred to them in his novel, "Remembrance of Things Past".

Ingredientes

  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 3/4 cup confectioners' sugar, plus extra for dusting
  • Grated rind of 1 lemon or orange
  • 1 tablespoon lemon or orange juice
  • 6 tablespoons sweet butter, melted and slightly cooled

Direcciones

  1. Preheat the oven to 375 F.
  2. Generously butter a 12-cup madeleine pan. If you do not have one, use a muffin pan.
  3. Sift together the flour and the baking powder.
  4. Using an electric mixer, beat together the eggs and the powdered sugar in a bowl for 5-7 minutes or until thick and creamy and the mixture leaves a ribbon trail when the beaters are lifted.
  5. Gently fold in the lemon or orange rind and the juice using a rubber spatula or metal spoon
  6. Beginning with the flour mixture, alternately fold in the flour and the melted butter in four batches using a rubber spatula
  7. Allow the mixture to stand for 10 minutes
  8. Carefully spoon into the pan
  9. Tap gently to release any air bubbles
  10. Bake for 12-15 minutes
  11. Rotate the pan halfway through the cooking time
  12. Bake until a skewer or cake tester inserted in the center comes out clean
  13. Tip the madeleines onto a wire rack to cool completely
  14. Dust with the confectioners' sugar before serving
