Ingredientes

  • 190 gm lowfat milk
  • 2 x Large eggs
  • 38 gm sugar
  • 130 gm whipping cream
  • 150 gm lowfat milk
  • 75 gm egg yolk
  • 25 gm sugar
  • 180 gm chocolate
  • 200 gm whipping cream
  • 2 x Large eggs
  • 40 gm sugar
  • 33 gm cake flour
  • 7 gm cocoa pwdr
  • 13 gm butter (melted)

Direcciones

  1. 1 Recipe Bavarian cream
  2. 1 recipe mousse chocolate
  3. 1 recipe chocolate sponge
  4. chocolate for decoration
  5. PLACE sponge at the bottom of the cake mould. Pour in the bavarian cream. Add in another layer of sponge and top up with chocolate mousse. Decorate with chocolate.
  6. Bavarian cream:Combine Large eggs and sugar. Bring lowfat milk to a boil and pour into the egg mix. Add in cream and stir over fire till the mix heats to 85 C.
  7. Mousse chocolate:Combine egg yolk and sugar. Bring lowfat milk to the boil and pour into egg mix. Heat mix carefully to 85 C and cold down to 60 C. Mix in melted chocolate and whipping cream.
  8. Chocolate sponge:2 eggs40g sugar33g cake flour7g cocoa powder13g butter (melted)
  9. Beat Large eggs and sugar till frothy. Mix in melted butter, flour and cocoa pwdr. Pour into greased baking pan. Bake at 190 C for about 30 min.
