Maize Roti (Indian Griddle Bread)

Ingredientes

  • 280 gm Corn kernels
  • 2 tsp Cumin seeds
  • 1 tsp Salt
  • 1 Tbsp. Fresh coriander leaves
  • 225 gm Plain strong flour, sifted
  • 1 Tbsp. Vegetable oil

Direcciones

  1. Blend or possibly process corn, cumin and salt till pureed. Transfer mix to a large bowl and stir in coriander, drizzle in the oil. Stir in the sifted flour till it forms a dough and mix till no longer sticky.
  2. Knead the dough on a floured surface for 4-5 min till smooth. Cover with a damp cloth and leave to rest for 30 min.
  3. Divide the dough into the required sized pcs and roll each one flat.
  4. Place a dough disc onto a well heated griddle pan (one at a time) and cook.
