Ingredientes

  • 1/2 c. Unsalted Butter
  • 3 lrg Egg Yolks
  • 1 1/2 tsp Warm Water
  • 2 tsp Orange Juice
  • 1 tsp Lemon Juice
  • 1 tsp Chopped Orange Zest
  • 1/4 tsp Salt
  • 2 dsh Tabasco Sauce

Direcciones

  1. Heat butter. Heat egg yolks and 1-1/2 ts water in top of double boiler over simmering water, whisking constantly, till yolks triple in volume.
  2. Remove pan from water; whisk butter very gradually into egg yolks. Whisk in remaining ingredients. Let stand at room temperature till ready to serve. Serve with cooked fresh asparagus.
