%20for%20a%20break%20%E2%80%93%20and%20boy%20am%20i%20loving%20it!%20%20%20i%20get%20to%20eat%20my%20mum%E2%80%99s%20cooking%20every%20single%20day%20-%20after%20months%20of%20having%20to%20cook%20myself,%20this%20is%20a%20real%20treat!%20%20%20and%20in%20the%20last%20couple%20of%20weeks%20i%20have%20been%20home,%20i%20have%20gotten%20to%20taste%20a%20variety%20of%20traditional%20dishes%20that%20i%20rarely%20make%20in%20my%20own%20kitchen%20%E2%80%93%20one%20of%20them%20being%20home-made%20pickles.%3C/p%3E%3Cp%3Epickles%20are%20a%20staple%20in%20our%20household%20-%20pick%20any%20random%20day,%20and%20you%20will%20find%20atleast%20two%20or%20three%20varieties%20to%20choose%20from.%20while%20the%20major%20varieties%20of%20South%20Indian%20pickles%20revolve%20around%20the%20ingredients%20%E2%80%93%20from%20tiny%20raw%20mangoes%20to%20lemons%20to%20garlic%20-%20slight%20nuances%20in%20the%20proportion%20of%20salt%20and%20spices,%20and%20the%20method%20of%20cooking,%20can%20lead%20to%20interesting%20variations%20in%20flavour.%20however,%20since%20it%20usually%20entails%20a%20time-consuming%20process,%20the%20art%20of%20pickle-making%20has%20lost%20its%20appeal%20for%20many%20(me%20included).%20hence,%20i%20was%20a%20bit%20surprised%20when%20my%20mother%20announced%20one%20morning%20that%20she%20was%20planning%20to%20make%20mangai%20thokku%20or%20raw%20mango%20pickle%20-%20at%20home,%20from%20scratch.%20i%20had%20no%20idea%20of%20what%20was%20involved,%20but%20imagined%20it%20would%20take%20a%20whole%20day%20to%20complete.%20i%20was%20in%20for%20a%20pleasant%20surprise%20%E2%80%93%20the%20whole%20process%20took%20just%20about%20an%20hour!%20and%20the%20result%20was%20a%20flavourful,%20spicy%20pickle%20with%20a%20sour%20edge%20%E2%80%93%20perfect%20for%20a%20meal%20that%20involves%20rotis/rice%20and%20yoghurt!%20%20so,%20why%20not%20try%20making%20this%20at%20home%20some%20time?%20after%20all,%20the%20thrill%20of%20making%20your%20own%20can%20never%20be%20matched,%20right?%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E5%20medium-sized%20Green/Raw%20Mangoes%3C/p%3E%3Cp%3EMaking%20the%20Mangai%20Thokku:%3C/p%3E%3Cp%3EPeel%20the%20raw%20mangoes%20and%20shred%20them.%20Dry%20roast%20the%20fenugreek%20seeds,%20cool%20slightly%20and%20then%20powder%20them.%20Heat%20about%202%20tbsp%20of%20oil%20on%20medium%20heat,%20and%20add%20the%20mustard%20seeds.%20When%20the%20seeds%20start%20to%20splutter,%20add%20in%20the%20shredded%20raw%20mangoes%20and%20stir%20until%20it%20is%20evenly%20coated%20with%20oil%20(add%20more%20oil%20if%20needed).%20Cook%20the%20mango%20for%20a%20few%20minutes%20until%20it%20starts%20to%20become%20soft%20and%20comes%20together%20in%20a%20mass.%20Add%20the%20salt%20and%20chilli%20powders%20and%20stir%20well.%20If%20the%20mixture%20starts%20to%20become%20dry,%20add%20some%20oil.%20Add%20in%20the%20turmeric%20powder,%20fenugreek%20powder%20and%20asafoetida%20and%20stir%20well.%20Cook%20the%20mixture%20until%20the%20oil%20starts%20to%20seperate%20from%20the%20mixture%20and%20come%20to%20the%20sides%20of%20the%20pan.%20Once%20its%20ready,%20add%20enough%20oil%20to%20form%20a%20layer%20on%20top%20of%20the%20pickle,%20stir%20once%20and%20take%20it%20off%20heat.%20This%20layer%20of%20oil%20is%20necessary%20to%20keep%20the%20pickle%20from%20spoiling.%20Cool%20an%20store%20in%20an%20airtight%20container%20in%20the%20fridge%20and%20use%20within%202%20weeks.%3C/p%3E){kind=link}
