Ingredientes

  • 1 x ripe mango peeled, pitted
  • 1/4 c. diced (1/4") red onion
  • 1 tsp finely-chopped garlic
  • 1/2 tsp finely-chopped jalapeno pepper seeds removed
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. minced fresh mint
  • 1 Tbsp. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste

  1. Cut themango into 1/4-inch dice and place in a bowl. Add in the remaining ingredients and fold together with a rubber spatula. Chill, covered, for up to 3 hrs before serving.
