Ingredientes

  • 4 c. Gourmet salad greens
  • 1 x Mango, peeled and sliced
  • 1 sm Avocado, peeled and sliced
  • 1/3 c. Minced tomato
  • 1/4 c. Fresh lime juice
  • 2 Tbsp. Minced fresh cilantro
  • 2 Tbsp. Minced fresh basil
  • 1 Tbsp. Sherry vinegar
  • 1 Tbsp. Low-sodium soy sauce
  • 1 tsp Chopped seeded jalapeno pepper
  • 1/2 tsp Grnd coriander
  • 1/4 tsp Salt
  • 1/8 tsp Pepper
  • 2 Tbsp. Minced dry-roasted cashews

Direcciones

  1. Place 1 c. salad greens on each of 4 individual plates; divide mango and avocado proportionately among salads.
  2. Combine tomato and next 9 ingredients (tomato through pepper) in a bowl; stir well.
  3. Drizzle about 3 Tbsp. dressing over each salad, and top each with 1-1/2 tsp. cashews.
  4. Yield: 4 servings.
