- Coarsely chop peppers, pimentos, almonds, currants, and garlic. In a large pan, mix the sugar, vinegar, powdered ginger, and red peppers and bring to a boil. Combine the two mixtures, and boil 15 min. Add in mangos and boil till tender, about 2 hrs. Makes about 8 qts. Very good!
