- How to make mango surprise crunch
- Preheat the oven to 160C/gas mark 2. Whisk the egg whites in a clean bowl until they form soft peaks. Add the sugar 1 tbsp at a time along with the baking powder and continue to whisk to stiff peaks. Fold in the crackers and nuts and spoon into a greased 22cm (9in) pie or plan dish and level the surface. Bake for 35 minutes then remove and cool, and refrigerate overnight.
- Crush the meringue and half fill 4 serving glasses. Mix together the mango and crème fraiche and spoon over the meringue. Top with the whipped cream and serve scattered with crushed nuts.
