Receta Mango Margaritas
One leftover mango equals a new margarita!

I had one leftover mango that was finally nearing the ripening stage. When I was making our fish tacos salad for the Cook the Books Club post over An Embarrassment of Mangoes by Ann Vanderhoof, I had to search the grocery store for ripe ones. They were all rock hard. So, finally a week later, I had a fragrant, soft mango ready to go.
We had worked outside in the garden and yard all day. We planted strawberries, four trees, one grape, and a lilac bush. Around 4:00, we were ready to sit on the porch, start the chiminea and enjoy the late afternoon.
I whipped up this margarita for us to use up that last mango. These were quite tasty and I think I will get some more mangoes ripening on the counter for next weekend!

Mango Margaritas
- 1 ripe mango, peeled, pitted and diced
- juice of one lime
- 1 cup 100% Agave Tequila
- 2 oz. Agave nectar
- 2 cups chipped ice
Place all ingredients in a blender and let ‘er rip!
This recipe made enough for four margaritas.
I garnished each glass with some frozen blueberries, mostly for color, but they were a tasty addition!
