For this blog: Over the last week I was jotting down recipe ideas like crazy! Haven't a clue how they will taste but I'm looking forward to testing them and sharing the winners with you!
For College and University Students: I have a new e-cookbook for you that’s focused on making your college cooking experience not totally suck. It'll be ready very soon! I'm also planning to visit more colleges and universities this year to cook with both new students and those who will be graduating in the spring and getting ready to start the next leg of their adventure in life.
My biggest struggle with eating healthy is choosing smart snacks.
When I'm hungry I often reach for junk food so my plan is to blend more fruit smoothies and avoid the roller coaster ride I experience from eating sweets. This Mango Pineapple Avocado Smoothie only requires 3 ingredients so it's quick and easy to pull together.
The mango and pineapple juice provide lots of sweetness and the avocado makes it nice and thick! The bonus is avocado happens to be one of the healthiest fruits you can eat as they have been proven to help reduce LDL (bad) cholesterol. That should help reduce the suffering through the run portion of my triathlon (at least that's what I'm telling myself).
