Ingredientes

  • 2 c. Peeled, diced ripe mangoes
  • 1 c. Peeled, diced jicama - (abt 1/2 lb)
  • 1/2 c. Minced red pepper
  • 2 Tbsp. Minced cilantro
  • 1 Tbsp. Fresh lime juice Lettuce leaves
  • 6 slc Red onion - (thin slices) separated into rings
  • 1/3 c. Crema Mexicana (Mexican-style whipping cream)
  • 3 Tbsp. Frzn orange juice concentrate
  • 3 Tbsp. Lowfat milk
  • 1 Tbsp. Tabasco green pepper sauce

Direcciones

  1. In medium bowl, combine mango, jicama, red pepper, cilantro and lime juice. Toss gently but thoroughly. Cover and chill.
  2. Arrange lettuce leaves on 6 salad plates. Mound 1/2 c. mango mix in center of plate. Drizzle 1 1/2 Tbsp. of Creamy Orange Jalapeno Dressing over each salad. Garnish with red onion rings.
  3. Prepare Creamy Orange Jalapeno Dressing: In small bowl, whisk all ingredients till well blended. Cover and chill till serving time. Serve chilled.
  4. This recipe yields 6 servings.
