Ingredientes

  • 1 x Red bell pepper -- sliced
  • 1 x Shallot -- chopped
  • 2 tsp Sesame oil
  • 1/2 c. Fresh cilantro leaves -- Chopped
  • 1 lb Shrimp -- cleaned and Deveined
  • 3 Tbsp. Fresh lime juice
  • 2 tsp Bon Appetit
  • 16 ounce Black beans -- rinsed
  • 1 c. Mango -- cut into 1" cubes
  • 8 ounce Pasta -- small shells

Direcciones

  1. In a medium bowl, toss shrimp with lime juice. Sprinkle generously with Bon Appetit. Set aside.
  2. Bring a large pot of water to a boil. Add in pasta, and cook till just al dente, 8-10 min. Drain.
  3. In a large non-stick skillet over medium heat, saute/fry red bell pepper and shallot in sesame oil till pepper is almost soft - don't allow to brown.
  4. Add in cilantro, and shrimp. Continue to cook till shrimp is pink, stirring occasionally, about 4 min. Add in black beans, cooked pasta and mango; stir together. Remove from heat when beans are heated through. Serve.
