....%20I%20have%20already%20tried%20many%20truffles%20and%20mango%3C/p%3E%3Cp%3Etruffles%20was%20in%20my%20mind%20for%20a%20long%20time,%20even%20tried%20once%20which%20did%20not%20turn%20out%3C/p%3E%3Cp%3Eas%20expected%20....%20%20so%20this%20Christmas%20I%20tried%20these%20again%20and%20it%20came%20out%20pretty%3C/p%3E%3Cp%3Ewell.....%20I%20used%20the%20basic%20recipe%20of%20Pumpkin%20Truffles.....%20The%20only%20problem%20was%20to%20shape%20the%20ganache%20to%20a%3C/p%3E%3Cp%3Eperfect%20ball....%20the%20ganache%20was%20so%20fragile%20you%20need%20to%20freeze%20them%20before%20and%3C/p%3E%3Cp%3Eafter%20shaping%20it.....%20also%20you%20have%20to%20rub%20your%20hands%20with%20powdered%20sugar%20very%3C/p%3E%3Cp%3Ewell.....%20%20May%20be%20using%20a%20chocolate%20mould%20will%20make%20the%20whole%20process%20little%20more%3C/p%3E%3Cp%3Eeffortless;%20I%20have%20to%20try%20that%20next%20time.....%20Mango%20puree%20should%20be%20thick%20and%20I%3C/p%3E%3Cp%3Eused%20frozen%20Alphonso%20mango%20puree....%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPour%20340gm%20(12%20oz)%20white%20chocolate%20into%3C/p%3E%3Cp%3Ea%20medium%20mixing%20bowl.%3C/p%3E%3Cp%3EIn%20a%20separate%20small%20bowl,%20measure%20out%20mango%3C/p%3E%3Cp%3Epuree%20and%20rum.%20Set%20aside.%3C/p%3E%3Cp%3EAdd%20cream%20to%20a%20medium%20sauce%20pan,%20and%3C/p%3E%3Cp%3Escrape%20in%20vanilla.%3C/p%3E%3Cp%3EHeat%20on%20medium,%20stirring%20constantly,%3C/p%3E%3Cp%3Euntil%20cream%20just%20comes%20to%20a%20boil.%3C/p%3E%3Cp%3EPour%20cream%20over%20chocolate,%20and%20whisk%3C/p%3E%3Cp%3Euntil%20chocolate%20is%20melted%20and%20smooth.%3C/p%3E%3Cp%3EThen,%20while%20still%20stirring%20constantly,%3C/p%3E%3Cp%3Ewhisk%20in%20your%20mango%20puree%20mixture.%3C/p%3E%3Cp%3ESet%20aside%20until%20cooled%20to%20room%3C/p%3E%3Cp%3Etemperature.%3C/p%3E%3Cp%3EChill%20in%20the%20fridge%20overnight.%3C/p%3E%3Cp%3EScoop%20small%20mounds%20onto%20parchment%20lined%3C/p%3E%3Cp%3Ebaking%20sheets.%20Freeze%2030%20minutes.%3C/p%3E%3Cp%3ERub%20powdered%20sugar%20on%20your%20hands%20and%3C/p%3E%3Cp%3Epour%20the%20rest%20into%20a%20bowl.%20Take%20a%20mound%20of%20ganache%20off%20of%20the%20parchment%20paper%3C/p%3E%3Cp%3Eand%20drop%20in%20the%20bowl%20of%20powdered%20sugar.%3C/p%3E%3Cp%3ERoll%20it%20around%20a%20bit%20and%20then%20shape%3C/p%3E%3Cp%3Einto%20balls%20and%20lay%20them%20on%20a%20baking%20sheet%20lined%20with%20more%20parchment%20paper.%3C/p%3E%3Cp%3EChill%20in%20the%20freezer%20for%20at%20least%2015%20min.%3C/p%3E%3Cp%3EHeat%20up%20dark%20chocolate%20over%20a%20double%3C/p%3E%3Cp%3Eboiler.%20(Make%20sure%20chocolate%20isn't%20too%3C/p%3E%3Cp%3Ehot%20or%20runny%20or%20your%20ganache%20won't%20hold%20together%20when%20you%20dip%20it.%20Make%20sure%3C/p%3E%3Cp%3Echocolate%20doesn't%20cool%20down%20too%20much%20either.%20The%20chocolate%20should%20be%20completely%3C/p%3E%3Cp%3Esmooth%20and%20velvety).%3C/p%3E%3Cp%3ETake%20out%20a%20few%20truffles%20at%20a%20time%20(1/3%20to%201/4%20of%20the%20entire%20batch),%20and%3C/p%3E%3Cp%3Edip%20in%20the%20chocolate%20and%20place%20on%20another%20sheet%20of%20parchment%20paper.%20(To%20dip,%20since%20these%20were%20so%20fragile,%20you%20can%3C/p%3E%3Cp%3Eplopped%20them%20in%20the%20melted%20chocolate,%20spooned%20chocolate%20over%20it%20to%20cover%20it,%3C/p%3E%3Cp%3Escooped%20it%20up%20with%20a%20spoon,%20transferred%20it%20to%20a%20fork%20to%20let%20the%20excess%3C/p%3E%3Cp%3Echocolate%20run%20off,%20then%20transferred%20it%20back%20to%20the%20spoon%20so%20that%20I%20could%20lay%20it%3C/p%3E%3Cp%3Enicely%20on%20the%20parchment%20paper).%3C/p%3E%3Cp%3ERefrigerate%20for%20a%20good%203%20hours.%3C/p%3E){kind=link}
