Ingredientes

  • 1 c. flour
  • 1 c. lowfat milk
  • 1 x egg beaten
  • 1/2 tsp salt
  • 2 lb ricotta
  • 8 ounce fat-free cream cheese
  • 2 x Large eggs
  • 1 handf minced fresh parsley Freshly-grnd black pepper to taste
  • 1/4 c. grated mozzarella
  • 2 c. Vita Greco's Gravy (see recipe)

Direcciones

  1. To make Crepes: Mix ingredients together and stir till smooth. Drop by spoonfuls or possibly 1/4 c. of mix onto a warm, lightly greased nonstick 6-inch pan. Crepes should form and become dry almost instantly as you swirl the pan and its contents. Turn crepe over to cook other side quickly.
  2. Remove cooked crepe to waxed paper to cold. They can be stacked with waxed paper between each and then placed in the freezer till you're ready to fill them. This makes about 9 crepes which can be filled with more than just ricotta. Use for cannelloni, blintzes, etc.
  3. To make Ricotta Filling: Whip all of the ricotta filling ingredients together. Place a spoonful of filling in the center of each crepe, then roll up, and tuck in the ends.
  4. Spread a little Vita Greco's Gravy on the bottom of a baking pan to proportionately coat the pan. Then, arrange manicotti in pan loosely and cover with sauce. Bake at 425 degrees, when the sauce bubbles, serve.
  5. This recipe yields 4 servings.
