Direcciones

  1. Glaze
  2. Mix ingredients together and pour over pork.
  3. Allow to marinate 3 hours to overnight.
  4. Date Sauce
  5. Saute onion and garlic in olive oil in sauce pot.
  6. Add in dates, balsamic vinegar, ginger, chipotle and paprika.
  7. Stir and allow to saute for a moment.
  8. Add in chicken stock and allow sauce to reduce to desired consistency.
  9. Couscous
  10. Prepare couscous as directed.
  11. Saute prepared couscous and toasted pine nuts (or almonds) in pan with butter.
  12. Stir in orange juice and zest.
  13. Season with s&p.

    For the glaze, it lists red wine vinegar twice. Not sure if this is a typo but just wanted to confirm that it needs 1 1/4 tsp red wine vinegar?
