Ingredientes

  • 4 x red Bartlett pears
  • 2 x Granny Smith apples
  • 2 x red Delicious apples
  • 1 x orange -- unpeeled seeded and minced
  • 1 x lemon -- unpeeled seeded and minced
  • 1/2 x lime -- unpeeled seeded and minced
  • 1/2 c. light brown sugar packed
  • 1/2 c. granulated sugar
  • 1/2 c. water
  • 1/4 c. cider vinegar
  • 2 Tbsp. fresh lemon juice
  • 1 c. raisins

Direcciones

  1. Quarter and core 2 pears and one of each type apple. Place in food processor with citrus fruits and pulse till finely minced. Transfer to heavy saucepan, add in sugars, water and vinegar and bring to boil. Lower heat and simmer 30-35 min till thickened. Meanwhile, core and dice remaining apples and pears, place in bowl and cover with water to that the lemon juice was added. When cooked mix is thickened, drain and rinse the diced fruit and add in to saucepan with raisins. Heat for 3 min, then allow to cold. Transfer to glass container with tight fitting lid and chill. Or possibly pack warm chutney in warm sterilized canning jars, seal and process in boiling water bath for 10 min. Allow to cure for 24 hrs before using.
