%20is%20much%20different%20from%20New%20Orleans%20Mardi%20Gras.%20%20Long%20story%20short,%20it%20involves%20roaming%20around%20rural%20areas%20begging%20for%20ingredients%20to%20make%20a%20community%20gumbo.%20%20This%20includes%20chanting%20(in%20Cajun%20French),%20singing%20(in%20Cajun%20French),%20dancing,%20harassing%20(in%20fun),%20and%20otherwise%20entertaining%20the%20people%20you%20are%20begging.%20%20It%20also%20includes%20chasing%20chickens.%20%20If%20you'd%20like%20to%20read%20more,%20it's%20all%20right%20here,%20babe.%3C/p%3E%3Cp%3EHere%20it%20is%20in%20pictures,%20taken%20by%20my%20mom%20and%20dad%20who%20came%20to%20witness%20my%20Mardi%20Gras%20hi-jinks%20in%20Basile,%20LA%20last%20year.%3C/p%3E%3Cp%3EWe%20start%20at%20dark-thirty%20at%20the%20town%20barn.%20%20Everyone%20gathers%20to%20pay%20association%20dues,%20register,%20do%20some%20last%20minute%20costume%20tweaking,%20greet%20people%20you%20may%20not%20have%20seen%20in%20a%20while,%20drink%20your%20first%20beer%20(or%20two)%20of%20the%20day,%20and%20maybe%20eat%20something.%3C/p%3E%3Cp%3EWe%20load%20up%20on%20wagons%20and%20make%20our%20way%20through%20town.%20%20Many%20of%20our%20stops%20are%20at%20the%20houses%20of%20community%20elders%20who%20once%20ran%20Mardi%20Gras%20back%20in%20the%20day.%3C/p%3E%3Cp%3EWe%20assume%20a%20begging%20position%20and%20begin%20our%20Mardi%20Gras%20song,%20led%20by%20Mr.%20Potic%20Rider.%20%20The%20song%20tells%20our%20story--what%20we're%20doing,%20what%20we%20want,%20what's%20going%20on.%20%20The%20home%20owner%20may%20give%20money%20or%20something%20to%20use%20for%20the%20community%20gumbo.%3C/p%3E%3Cp%3EAnother%20stop%20along%20the%20way%20and%20one%20of%20my%20favorites.%20%20The%20roof%20is%20low,%20making%20it%20easy%20to%20climb%20on%20(not%20that%20I%20have).%20There's%20also%20a%20good%20fence%20to%20climb,%20a%20garden%20to%20%22steal%22%20from,%20a%20shed%20with%20a%20boat,%20and%20all%20sorts%20of%20other%20things%20to%20cut%20up%20with.%3C/p%3E%3Cp%3EThis%20may%20have%20been%20my%20parents'%20favorite%20stop%20too.%20%20They%20had%20to%20watch%20this%20video%20of%20a%20chicken%20chase%20over%20and%20over.%3C/p%3E%3Cp%3EDon't%20matter%20if%20it%20rains%20(and%20it%20might%20this%20year).%20%20The%20show%20goes%20on.%3C/p%3E%3Cp%3EAt%20some%20point,%20weather%20doesn't%20really%20matter.%3C/p%3E%3Cp%3EOne%20of%20our%20Capitaines,%20complete%20with%20whip,%20for%20keeping%20the%20Mardi%20Gras%20in%20line.%3C/p%3E%3Cp%3EBecause%20if%20weather%20doesn't%20matter,%20not%20much%20else%20does%20either.%3C/p%3E%3Cp%3EAnother%20stop%20and%20another%20round%20of%20the%20Mardi%20Gras%20song%20led%20by%20Mr.%20Potic.%3C/p%3E%3Cp%3EMore%20next%20time%20(because%20it's%20too%20long%20a%20day%20for%20one%20post).%3C/p%3E%3Cp%3EAll%20that%20crazy%20can%20sure%20make%20you%20hungry.%20%20How%20about%20some%20party%20food?%3C/p%3E%3Cp%3EThese%20Artichoke%20Squares%20remind%20me%20of%20artichoke%20balls%20that%20are%20often%20served%20at%20parties%20around%20South%20Louisiana.%20%20I%20started%20off%20following%20the%20basic%20recipe.%3C/p%3E%3Cp%3EAnd%20they%20were%20good.%3C/p%3E%3Cp%3EBut%20Mardi%20Gras%20is%20about%20excess,%20so%20I%20took%20some%20inspiration%20from%20my%20friend%20Marguerite%20@%20Cajun%20Delights,%20who%20made%20a%20Crab%20and%20Artichoke%20Spread.%3C/p%3E%3Cp%3ECrab%20Artichoke%20Squares%3C/p%3E%3Cp%3EI%20liked%20these%20even%20more%20than%20the%20original.%3C/p%3E%3Cp%3ENext,%20I%20tried%20Spinach%20Artichoke%20Squares.%3C/p%3E%3Cp%3EI%20still%20liked%20the%20Crab%20version%20better,%20but%20The%20Husband%20preferred%20these.%3C/p%3E%3Cp%3EThe%20recipe%20can%20be%20found%20coming%20up%20in%20a%20Guest%20Post%20at%20Scarlett's%20Excellent%20Adventures.%3C/p%3E%3Cp%3EArtichoke%20Squares%3C/p%3E%3Cp%3Eadapted%20from%20Mary%20Decareaux%3C/p%3E%3Cp%3EGrease%20an%208%20x%208%20baking%20dish.%20%20Preheat%20oven%20to%20325%20F.%3C/p%3E%3Cp%3EHeat%20olive%20oil%20in%20a%20skillet%20over%20medium%20heat.%20%20Add%20onion%20and%20garlic%20and%20saute%20until%20onion%20is%20translucent,%20about%205-8%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20onion%20cooks,%20add%20the%20artichokes,%20cheeses,%20bread%20crumbs,%20and%20seasonings%20to%20a%20mixing%20bowl.%20%20Stir%20in%20the%20onion.%20%20Mix%20in%20the%20eggs,%20combining%20well.%20%20Gently%20fold%20in%20the%20crab%3C/p%3E%3Cp%3EAdd%20the%20mixture%20to%20the%20baking%20dish.%20%20Bake%2030%20minutes,%20or%20until%20set.%20%20Cool%20for%20about%2015-20%20minutes%20before%20cutting%20into%20squares.%3C/p%3E%3Cp%3ENeed%20more%20Mardi%20Gras?%3C/p%3E%3Cp%3ENeed%20more%20crab?%3C/p%3E%3Cp%3ELinking%20with:%3C/p%3E){kind=link}
