Receta Margarita Cupcakes
Today I am happy to be a part of a very fun surprise for my blogging friend Aubrey of Real Housemoms! To celebrate her birthday, several bloggers and myself have gotten together to throw her a virtual birthday bash and I'm bringing these wonderful Margarita Cupcakes to the party!
I've only known Aubrey for a few months now, since I started as a contributor to her very successful blog Real Housemoms, but she one of the sweetest people I know and I am LOVING being a monthly contributor. If you aren't familiar with her blog, you've got to check it out. There is something for everyone there: food, recipes, drinks, crafts, home projects and more!
One thing I do know about Aubrey is that she is a lover of all things MARGARITA! That's why I decided these cupcakes would be my gift to her! They are super easy to make and they taste AWESOME! (They should, they have a 1/2 cup of the finest Mexican Tequila in them! haha) They start with a box of cake mix and get pimped out into these citrus-y lovelies! There is nothing I do not LOVE about these cupcakes because, like Aubrey, I love Margaritas too!
So Aubrey, Happy Birthday!!! Blow out your candle and make a wish! Then go and enjoy your day! You deserve a great one!
Margarita Cupcakes

Lemon-Lime flavored cupcakes are spiked with tequila and frosted with a lime buttercream for a yummy boozy treat!
Ingredients
- 1 - 15.25oz. box of lemon cake mix
- 1/2 cup water
- 1/2 cup canola oil
- 1/2 cup tequila OR water
- 1 TBS grated lime zest
- 3 large eggs
- 1 box (4 serving size) lime flavored gelatin (can be sugar free or regular)
- For frosting:
- 1/2 cup unsalted butter, softened to room temp
- 1/4 tsp. kosher salt
- 2 1/2 cups powdered sugar
- 1/2 tsp. pure vanilla extract
- juice of half a lime
- For garnish:
- green colored sprinkles or sugar
- small lime slices
Instructions
Preheat oven to 350 degrees F. Line standard muffin tins with paper liners (I love the parchment ones!)
In large bowl, combine all cake ingredients with electric mixer on low. Beat on med-high for about 2 minutes.
Fill paper liners about 2/3's of the way full. Bake in oven until cake is done (toothpick inserted into center comes out clean) or about 15 - 20 minutes. Remove from pans and allow to cool on rack.
Make the frosting by combining all frosting ingredients until smooth. Frost cupcakes once they are completely cooled and garnish as desired with green sprinkles or sugar and lime slices.
Yield: approx. 18 cupcakes
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 20 mins.
Total time: 30 mins.
