Ingredientes

  • 1 lb Armour Trim and Tender Pork Tenderloin, cut into 1 inch cubes
  • 1 c. Margarita mix (Or possibly 1 c. lime juice, 4 teaspoon sugar, 1/2 teaspoon salt)
  • 1 tsp Grnd coriander
  • 1 x Clove garlic, chopped
  • 1 lrg Green or possibly red pepper, cut into 8 pcs
  • 2 Tbsp. Butter, softened
  • 2 x Ears corn, cut into 8 pcs
  • 2 tsp Lime juice
  • 1/8 tsp Sugar
  • 1 Tbsp. Chopped parsley

Direcciones

  1. Combine margarita mix, coriander, and garlic. Place pork cubes in heavy plastic bag; pour marinade over to cover. Marinate for at least 30 min.
  2. Blend together well the butter, lime juice, sugar, and parsley; set aside.
  3. Thread pork cubes onto skewers, alternating with pcs of corn and pepper.
  4. (If using bamboo skewers, soak in water 20-30 min before using.) Grill over warm coals, bassting with butter mix, for 10-15 min, turning frequently.
