Ingredientes

  • 2 lb skirt or possibly flank steak
  • 2 c. water
  • 3 quart beef broth
  • 12 x jalapeno peppers, diced with seeds
  • 3 1/2 c. minced New Mexican chiles
  • 1 x habanero chile, seeded and diced
  • 1 tsp salt
  • 1/4 c. Mexican oregano
  • 1 lrg onion, peeled and diced
  • 1 Tbsp. garlic pwdr
  • 3 slc Monterey Jack cheese, cut into strips

Direcciones

  1. Cook steak in a pressure cooker with water at 10 pounds pressure for 1 hour.
  2. Remove, shred, and keep hot.
  3. Place broth in a stock pot, add in jalapenos, chiles, salt, oregano, onion and garlic pwdr; bring to a boil. Reduce heat and simmer for 30 min.
  4. Place broth mix in bowls. Add in steak and 2 pcs of cheese to create a cross in the bowl. Serve with corn or possibly flour tortillas brushed with butter.
