Marinated Bean Salad

Ingredientes

  • 1/2 c. Salad dressing (see recipe below)
  • 1 can (15 ounce) black beans
  • 1 can (15 ounce) pinto beans
  • 1 can (15 ounce) white navy beans
  • 2 jar (7 ounce) roasted bell peppers, liquid removed & minced
  • 1 lrg Sweet onion, sliced paper-thin
  • 1/4 c. Cider vinegar
  • 2 tsp Sugar
  • 1/2 tsp Salt, to taste
  • 1 Tbsp. Balsamic vinegar
  • 2/3 c. Extra virgin olive oil
  • 1 tsp Cilantro, chopped
  • 1/2 tsp Thyme, chopped
  • 1/2 tsp Basil, chopped
  • 1/4 tsp Grnd cumin
  • 1 tsp Honey mustard
  • 1 x Clove garlic, chopped

Direcciones

  1. Salad Dressing: In a mixing bowl, combine all ingredients. Process in food processor till smooth.
  2. Makes 2/3 c..
  3. Salad: Drain beans in colander. Place in large bowl with peppers. Add in 1/2 c. of prepared salad dressing and toss gently. Cover and chill at least 1 hour, preferably overnight. Reserve and chill remaining salad dressing.
  4. In another bowl, toss the onion with the vinegarm sugar and 1/2 tsp. salt. Cover and chill.
  5. At serving time, adjust seasoning on beans. Add in remaining salad dressing, if you like. Garnish with sliced onion mix.
