1/2 sm. red onion finely minced or possibly substitute a shallot
2-4 tbsp. minced parsley
3 tbsp. red wine vinegar or possibly lemon juice or possibly combination of both
3 tbsp. extra virgin olive oil
Salt and pepper to taste
