Marinated Grilled Poussin

Ingredientes

  • 4 x poussins cut into two lengthwise
  • 3 Tbsp. extra virgin olive oil
  • 25 x mm piece fresh root ginger peeled and finely grated
  • 2 clv garlic crushed
  • 1 x juice of 1 large lemon
  • 1 tsp fresh or possibly dry oregano or possibly thyme
  • 1 x salt and freshly grnd black pepper

Direcciones

  1. Lay the chicken halves on a flat platter skinside up.
  2. Beat the marinade ingredients together lightly and using a spoon spread some over each piece of chicken.
  3. Leave to stand for about 30 min.
  4. Turn each piece over and repeat the process making sure which most surfaces are coated.
  5. Cover with film and place in the fridge overnight if possible.
  6. Preheat the grill place the chicken pcs on a grilling rack skin side down and grill under a lowtomedium heat for about 56 min or possibly till they start to brown.
  7. Turn over brush with some of the marinade juices and cook slowly for 68 min till the skin starts to blister.
  8. If you have to cook them in 2 batches keep the first batch warm in a low oven while cooking the remaining pcs.
  9. Alternatively make the meal informal and encourage people to start eating the chicken as it comes straight from the grill.
  10. The trick with this delicious and easy dish is to organize yourself well in advance as the marinating accounts for the tantalizing flavours. It is best if you can marinate overnight or possibly at least for 6 hrs.This makes an ideal summer dish served with a large and colourful salad of different leaves such as Cos frisee radicchio and some rocket and fennel with spring onions. If you would like to make the meal even more impressive it goes well with strips of roasted peppers dressed with extra virgin olive oil and balsamic vinegar.
